For fish, meat, pizza, pasta: a versatile Neapolitano sauce according to Volodymyr Yaroslavskyi's recipe
The sauce in a dish is often one of the main ingredients that gives it the desired flavor. Depending on the dish, you can choose different sauces, but there is one universal one that goes perfectly with fish, meat, and dough – and that is tomato sauce.
Culinary expert Volodymyr Yaroslavskyi shared on Instagram a recipe for the perfect sauce made from tomatoes, onions, garlic, and spices, which will be moderately spicy but will give any dish an incredible taste and flavor.
Ingredients:
- tomatoes in their own juice – 1 kg
- onion – 1 pc
- a few green leaves of the 1st celery stalk
- garlic – 2-3 cloves
- olive oil – 2-3 tbsp
- dried oregano – a pinch
- thyme – 2 sprigs
- basil – 5-7 leaves
- freshly ground pepper, salt – to taste
Method of preparation:
1. Cut everything into a regular cube.
2. Fry the onion in vegetable oil over medium heat until it begins to brown.
3. Add celery and garlic and fry a little.
4. Add the tomatoes in their own juice, herbs, basil, salt, and black pepper, and simmer over low heat for 30 minutes until the sauce is fragrant and not at all sharp in acid. If you have very sour tomatoes, you can add 1 teaspoon of sugar.
5. Then rub the sauce through a large sieve.
The chef added that this sauce can be used to cook all kinds of pasta, seafood risotto, all fish and meat dishes, as well as pizza.
It's worth noting that you can add your favorite spices to this sauce: cloves, a little nutmeg, red pepper, and cinnamon, and eat it instead of ketchup!
