Ingredients for 2 servings

  • Eggs - 2 pcs
  • Burger buns - 2 pcs
  • Fresh spinach - 100 g
  • Vinegar - 1 tsp
  • Butter - 1 tsp
  • Nutmeg - 1 g

Ingredients for the sauce

  • Yolk - 3 pcs
  • Water - 1 tsp
  • Lemon juice - 1 tbsp
  • Butter - 65 gr
  • Salt - a pinch

Method of preparation

1.Fry the buns in butter until golden brown.

2. Prepare the poached eggs.

3. Fry the spinach in butter for 2-3 minutes to keep it green and add salt.

4. The last step is to prepare the hollandaise sauce, because it should be warm. Mix the egg yolks, lemon juice and water in a deep bowl.

5. Pour a little water into a saucepan and bring to a boil. It is important that when we put the bowl with the yolks in the water bath, the water does not reach the bowl. When the water boils, reduce the heat to a minimum.

6. Put the egg yolks in a water bath and stir constantly until they begin to thicken just a little.

7. Slowly pour in the melted butter, stirring constantly. Cook until the sauce has a good consistency. It should take 1-2 minutes.

8. As soon as it thickens, remove from the water bath and stir vigorously for 1 minute. Add salt.

9. Put the spinach on the bun, then the egg, pour the sauce over it, sprinkle with a pinch of nutmeg, and garnish with greens.
