Festive meat roll: a simple recipe

Ingredients
- pork brisket - 2.5-3 kg
- garlic - 1 head
- dried red chili pepper
- oil - 4 tbsp
- salt
- pepper
Method of preparation
1.Take a rectangular piece of pork brisket with clean skin. Rinse, dry, and cut lengthwise without cutting completely.
2. Cover the part without skin with cling film and beat it well with a hammer.
3. Season with salt on all sides. Mix squeezed garlic, chili pepper, ground black pepper and oil. Lubricate the meat on all sides except the skin. Wrap it in a roll.
4. Tie, wrap in parchment, then in foil and leave to marinate in the refrigerator for 10-12 hours.
5. Bake at 180 degrees for 3 hours.
6. Then remove the parchment and foil and bake for 25-30 minutes at 220 degrees. It can be served both hot and cold.
