Eggplant rolls with cheese filling: recipe for the most budget-friendly appetizer

Ingredients:
- eggplant - 3 pcs
- egg - 1 pc
- parmesan cheese - 3 tbsp
- breadcrumbs - 3 tbsp
- cream cheese - 250 g
- garlic - 2 cloves
- greens
- tomatoes - 2-3 pcs
- nuts to taste
Method of preparation:
1. Cut the eggplant thinly and season with salt. Set aside for 10 minutes so that they are not bitter.
2. Then blot off the liquid, brush with a beaten egg (you can add dried garlic and paprika to it) and sprinkle with a mixture of grated cheese and breadcrumbs. Put on a baking sheet with parchment. Grease the parchment a little with oil and bake for 15-20 minutes.
3. For the filling, mix cream cheese with herbs and garlic.
4. Spread the cream cheese on the baked eggplant, sprinkle with nuts, add a slice of tomato, roll up and serve!
