Eggplant can be used to make delicious appetizers like rolls. You can use any cheese, herbs, or vegetables for the filling.

A cook shared a recipe for delicious eggplant rolls with cheese filling, herbs, and tomatoes on Instagram.

Ingredients:

  • eggplant - 3 pcs
  • egg - 1 pc
  • parmesan cheese - 3 tbsp
  • breadcrumbs - 3 tbsp
  • cream cheese - 250 g
  • garlic - 2 cloves
  • greens
  • tomatoes - 2-3 pcs
  • nuts to taste

Method of preparation:

1. Cut the eggplant thinly and season with salt. Set aside for 10 minutes so that they are not bitter.

2. Then blot off the liquid, brush with a beaten egg (you can add dried garlic and paprika to it) and sprinkle with a mixture of grated cheese and breadcrumbs. Put on a baking sheet with parchment. Grease the parchment a little with oil and bake for 15-20 minutes.

3. For the filling, mix cream cheese with herbs and garlic.

4. Spread the cream cheese on the baked eggplant, sprinkle with nuts, add a slice of tomato, roll up and serve!
