Ingredients

  • Eggplants - 15-16 pcs
  • Red bell pepper - 1-2 pcs.
  • Orange bell pepper - 1-2 pcs.
  • Green bell peppers - 1-2 pcs.
  • Tomatoes - 1 kg
  • Carrots - 4-5 pcs
  • Garlic - 1 head
  • Hot pepper - as desired
  • Cilantro or parsley
  • Salt
  • Sugar - 2 tsp. per 1 jar
  • Peppercorns - 4-5 peas per 1 jar
  • Vinegar 9% - 1 tsp. per 1 jar.

Method of preparation

1. wash eggplants and cut lengthwise. Add salt and fry in a skillet with oil until golden. Lay out on a paper towel to get excess oil.

2. Peel garlic, slice peppers into straws, and grate carrots on a large grater.

3. Place carrots, peppers, hot peppers and herbs on each piece of eggplant. Wrap into rolls.

4. Place 2 garlic cloves and the rest of the ingredients in the bottom of each jar.

5. Fill with boiling water to the top and sterilize for 22 minutes after the water boils in the pot.

6. We close with lids, turn over and leave until completely cooled.
