1. Eggplant cutlets
Ingredients:
- eggplant - 2-4 pcs.
- onion - 1 pc.
- egg - 1 pc.
- flour - 2-3 tbsp.
- breadcrumbs - 100 g
- rye bread - 2 slices
- milk - 30-40 ml
- hard cheese - 100 g
- garlic - 1-2 cloves.
- vegetable oil - 1-4 tbsp
- salt, pepper - to taste
Method of preparation:
- Cut the eggplant into small cubes, and fry in vegetable oil.
- Soak the bread in milk.
- Grate the cheese on a coarse grater.
- Put the cooked eggplants in a blender and whisk until smooth, then put the minced meat in a bowl.
- Add the bread, egg, cheese, flour, chopped garlic, and onion, and mix.
- Form patties by hand, roll in breadcrumbs and fry in vegetable oil.
Serve the dish hot with sour cream and fresh vegetables or salad.
2. Warm salad
Ingredients:
- eggplants - 1 pc.
- pepper - 1 pc.
- tomatoes - 2 pcs.
- zucchini - 1 pc.
- onion - 1 pc.
- goat cheese - 100 g
- salt, pepper - to taste
- Dijon mustard - 1 tsp.
- lemon juice - 2 tsp.
- honey - 1 tsp.
Method of preparation:
- Wash, chop, and bake the vegetables in any way you like, preferably on the grill.
- Dressing: mix mustard, honey, lemon juice, salt, pepper, and mix thoroughly.
- Put the cooked vegetables on a plate, pour the sauce over them, and add the cheese.
Sprinkle with nuts before serving.
