Eggplant caviar in a new way: recipe for the most delicious summer appetizer
One of the most delicious, healthy, and easy summer snacks is eggplant caviar. For a spicy and bright flavor, you need not only to bake the vegetables but also add herbs, garlic, and spices.
A cook shared a recipe for delicious eggplant caviar with bell peppers, onions, herbs, and garlic on Instagram.
Ingredients:
- 4 eggplants
- 2 peppers
- tomatoes
- 1 onion
- 3-4 cloves of garlic
- herbs (parsley, cilantro)
- salt, pepper
- vegetable oil
- apple cider vinegar (if the tomatoes are sour, you may not need it)
Method of preparation:
1. Bake the eggplant and peppers at 220 C for 40 minutes.
2. Tomatoes and onions can be baked too, but you can also use raw vegetables.
3. Peel and finely chop everything, put it in a bowl, mix and season with oil and vinegar. You can eat it right away or put it in the fridge overnight.
