Eggplant caviar according to grandma's recipe: add bell peppers and tomatoes
Eggplant caviar is a dish that every Ukrainian housewife knows about. The fall is the best time to prepare this appetizer because all the vegetables are juicy and fresh. There are many different variations, but the classic one with bell peppers, onions and tomatoes remains the best.
The idea of making delicious homemade eggplant caviar was published on the Instagram page of food blogger Daryna with the nickname treskablog. This is the recipe her grandmother used to cook with.
Ingredients:
- eggplant - 2 pcs.
- bell pepper - 1 pc.
- onion - 1 pc.
- tomatoes - 500 g
Method of preparation:
1. Bake or boil the eggplant.
2. Chop all vegetables except tomatoes.
3. Put them in one container.
4. Season well with salt.
5. Peel the tomatoes and blend them in a blender.
6. Add the tomato mixture to the rest of the vegetables.
7. Add the oil.
8. Mix well and add spices to taste.
