Eggplant appetizer with cheese filling: a recipe for a delicious snack

Eggplants are ideal vegetables for baking and making delicious appetizers, salads, and caviar. They can also be tasty canned, stewed, and pickled.

The cook shared on Instagram a recipe for a delicious, budget-friendly eggplant appetizer with cheese filling.

Ingredients:

  • eggplant – 2 pcs
  • breadcrumbs – 150 g
  • flour – 100 g
  • eggs – 2-3 pcs
  • soft feta – 250 g
  • garlic – 2-3 cloves
  • tomato – 1 pc
  • dill – to taste
  • salt
  • lettuce leaves

Method of preparation:

1. Wash the eggplants and cut them into slices. Put them in a bowl, add salt, and leave for 15 minutes.

2. Dip each round in flour, egg and breadcrumbs.

3. Fry in vegetable oil over low heat on both sides until golden brown.

4. Filling: in a bowl, mix the cheese, finely chopped tomatoes, garlic and dill.

5. Spread a teaspoon of the cheese mixture on the eggplant, top with a lettuce leaf, and cover with another eggplant.
