Eggplant and pepper salad appetizer: cooked with a delicious sauce

Eggplant and peppers can be used to make delicious appetizers, as well as salads and stews. They can also be simply baked and served with feta and honey.

The cook shared a recipe for a delicious eggplant and bell pepper appetizer salad on Instagram.

Ingredients:

  • eggplant - 1 pc.
  • sweet pepper - 1 pc.
  • cilantro (can be without)
  • salt

For the dressing:

  • soy sauce - 1 tbsp. l.
  • apple cider vinegar - 1 tbsp.
  • sugar - 1/2 tsp.
  • garlic - 1-2 cloves.
  • sweet paprika - 1/2 tsp.
  • ground coriander - 1/4 tsp.
  • salt to taste

Method of preparation:

1. Cut the eggplant into slices, season with salt and leave for 15 minutes to avoid bitterness.

2. Slice the sweet pepper and fry in a frying pan with oil.

3. Rinse the eggplant, pat dry and fry in oil.

4. Mix all the ingredients for the dressing.

5. Combine the eggplant with the pepper, add the cilantro and season.
