Sweet, delicate, and fluffy eclairs with butter or condensed cream have many fans. This dish is usually bought in a store, because not everyone knows how to cook it properly. But making this dessert at home is actually very easy, and you can be sure that the dish is fresh and of high quality.

Famous Ukrainian confectioner Lilia Tsvit shared a simple idea for making delicious eclairs at home. It was posted on her Instagram page.

Recipe for eclairs with icing

Ingredients for the cream:

  • cottage cheese - 600 g
  • raw condensed milk - 120 g
  • powdered sugar - 120 g
  • butter - 200 g

Ingredients for the dough:

  • water - 250 ml
  • butter - 120 g
  • flour - 150 g
  • eggs - 4 pcs.
  • salt - a pinch

How to make the dough:

  1. Pour water into a saucepan with a thick bottom, add butter and salt, bring to a boil.
  2. Reduce the heat, add the sifted flour and mix everything quickly to make the mass brew.
  3. Cool a little.
  4. Add eggs one at a time, making the dough homogeneous.
  5. If it is still thick, add more eggs, mix each one separately and pour in gently. You need to monitor the consistency of the dough – it should be viscous, like thick glue, and when it comes off, a sharp tip should remain.
  6. Put everything in a pastry bag, make a 1-centimeter cut, and squeeze the eclairs onto a parchment-lined baking sheet with a 5-cm margin.
  7. Use a wet fork to make patterns on the eclairs.
  8. Bake at 200 degrees for the first 10 minutes, then reduce to 160 degrees and cook for another 25-30 minutes.
Preparation of cream for eclairs

The method of preparation of the cream:

  1. Add condensed milk to the cottage cheese, beat everything with a blender until smooth. Add powdered sugar and melted butter, mix everything.
  2. Fill the eclairs with a special nozzle or make an incision and fill with a spoon.
  3. Optionally, you can make a glaze for the eclairs from melted chocolate and orange dye.
  4. Dip the finished eclairs into it.
  5. Add confectionery sprinkles, nuts or chocolate chips on top.
