- buckwheat noodles - 2 handfuls
- small broccoli - 1 pc.
- peanuts - 2 tbsp.
- blue onion - 1 pc (small)
- soy sauce - 5 tbsp.
- oil - for frying
- chili pepper flakes - a pinch
- ginger - a small piece
- garlic - 2 cloves
- greens - for serving
- Dry the peanuts in a frying pan without oil. Cook the noodles according to the instructions on the package. Wash the broccoli and disassemble it into florets.
- Peel the onion, ginger, and garlic. Cut everything into strips, and put them into a hot and oiled frying pan. Add broccoli, and fry over high heat, stirring constantly.
- When the vegetables are browned, add the boiled noodles to the pan, pour in the soy sauce, and sprinkle with chili flakes. Stir-fry for a few more minutes.
- When serving, sprinkle with peanuts and finely chopped herbs – cilantro or green onions.
There is no need to salt the noodles, as the soy sauce is quite salty. This dish can be served either hot or cold.
