Diet risotto without rice: a recipe for an unusual dish from Volodymyr Yaroslavskyi
Risotto is a very tasty and satisfying dish based on rice, wine, and sometimes mushrooms and Parmesan. It is best served hot, you can add various delicious sauces and even vegetable juice for brightness, for example, beet juice.
MasterChef judge and culinary expert Volodymyr Yaroslavskyi shared a recipe for a delicious risotto on Instagram that will surprise you with its taste because the dish will be made not from rice, but from celery root (to watch the video, scroll to the end).
Ingredients:
- celery root - 300 g
- onion - 30 g
- vegetable or olive oil - 1-2 tbsp.
- thyme - to taste
- white wine - 40 g
- vegetable and chicken broth - 50-70 g
- butter - 20 g
- mascarpone - 75 g
- Parmesan cheese - 30 g
- salt, pepper - to taste
Method of preparation:
1. Wash, peel, and cut the celery root into very small cubes.
2. Very finely and carefully chop the onion, and fry over medium heat until golden brown.
3. Add the celery and fry a little.
4. Then pour in the white wine and evaporate it, add the broth and salt, stir, and simmer over low heat, stirring constantly for about 12-14 minutes.
5. Sauce: melt the butter in a saucepan, add mascarpone, and roux (flour and butter), and mix.
6. Add salt to the finished sauce and mix.
7. Add the finished sauce to the risotto, stir, and serve a delicious dish.
