Today, FoodOboz editorial team shares 3 recipes for unusual zucchini desserts that are very simple and quick to prepare, and most importantly, you can hardly taste the vegetables in them if you add cinnamon, honey, chocolate, and other flavorful ingredients.
1. Zucchini brownies with chocolate
Ingredients:
- zucchini - 2 pcs.
- flour - 1450 g
- baking powder - 1/2 tsp.
- bitter chocolate - 100
- eggs - 2 pcs.
- butter - 125 g
- brown sugar - 120 g
- vanilla - 1 tsp.
- salt - 1/4 tsp.
Method of preparation:
- Wash the zucchini, grate it on a fine grater, and squeeze the juice well.
- Melt the chocolate in a water bath with the butter and let it cool completely.
- Whisk the eggs with sugar and salt until thick, then add vanilla.
- Pour this mixture into the chocolate, add the grated zucchini, and mix.
- Sift the flour, mix with the baking powder, and add to the chocolate and zucchini mixture.
- Put the parchment in a baking dish, pour the batter, and send it for 30-35 minutes at 170-180 C.
Cut the finished cake and let it cool completely; it will be delicious with a chocolate drizzle.
2. Sweet zucchini and apple pancakes
Ingredients:
- zucchini - 500 g
- flour - 250 g
- sugar - 150 g
- oil - 80 ml
- eggs - 2 pcs.
- apple - 2 pcs.
- salt - 1/4 tsp
- baking soda - 1/4 tsp.
Method of preparation:
- Wash and peel apples and zucchini from the skin and seeds, and grate on a fine grater.
- Combine the mashed potatoes with sugar, sifted flour, salt, baking soda, and eggs, and mix.
- Heat a frying pan, pour in vegetable oil, drop in the pancakes with a spoon, and fry until done.
- Put the pancakes on paper towels so that all the fat remains on the paper.
3. Zucchini and apple pudding
Ingredients:
- zucchini - 300 g
- green apples - 200 g
- milk - 100 ml
- semolina - 4 tbsp.
- eggs - 2 pcs.
- sugar - 2 tbsp
- butter - 3 tbsp. l.
Method of preparation:
- Wash the zucchini, dice it, put it in a saucepan, and cover it with milk, add butter, and cook until half cooked - about 15 minutes.
- Wash, peel, and dice the apples, put them in a saucepan with the zucchini, add sugar and simmer for about 10 minutes with the lid closed.
- Then add the semolina, stir, and cook for another 5 minutes. Leave to cool completely.
- Add the egg yolks and mix well.
- Whisk the whites with salt, add gently, and mix.
- It is best to take baking dishes in portions, grease them with oil, and transfer the dough, put in the oven for 15-20 minutes at 190 C.
