Delicious tabouli salad in a new way: an exclusive recipe with pearl barley
Tabouli is one of the simplest and most budget-friendly yet delicious warm salads. In the classic version, the salad is based on couscous, but it can be replaced with more budgetary but no less tasty pearl barley.
Oleksandr Hromliuk shared a recipe for a delicious Tabouli salad with healthy pearl barley, which will turn out to be even tastier than the classic one, exclusively with FoodOboz.
Ingredients:
- boiled barley - 80 g
- cucumber - 30 g
- tomato - 30 g
- asparagus - 30
- parsley - 5 g
- spinach - 20 g
- mint - 5 g
- yogurt - 50 g
- olive oil - 20 g
- lemon juice - 5 g
- salt - to taste
Method of preparation:
1. Boil the pearl barley until tender.
2. Asparagus can also be boiled for about 2-3 minutes in well-salted water or fried in butter and cut into small, uniform pieces.
3. Wash the vegetables and herbs. Cut the tomato and cucumber into small cubes. Chop all the herbs.
4. Pour the yogurt into the bottom of the plate, add the porridge and vegetables on top, and drizzle with lemon juice and oil. Sprinkle with chopped herbs and serve.
