Delicious stuffed peppers without rice for lunch: what to add instead
Classic stuffed peppers are usually made with rice. But if you don't like this filling, use the following technique. You will need a regular chicken fillet and a lot of hard cheese. The dish is quite nutritious and not heavy.
The idea of cooking juicy stuffed peppers without rice was published on the Instagram page of cook Olha Riabenko. Thanks to the tomatoes, the filling is very juicy.
Ingredients:
- sweet pepper - 3 pcs.
- chicken fillet - 3 pcs.
- onion - 1 pc.
- garlic - 2 cloves
- olive oil
- Italian herbs - 1 tbsp
- chili flakes - optional
- tomatoes - 2 pcs.
- fresh basil - 1 tbsp
- cream cheese - 1 tbsp
- hard cheese - 200 g
- sugar - 1-2 tsp
- flour (if necessary) - 1 tbsp
- salt
Method of preparation:
1. Cut the peppers in half and clean them.
2. Drizzle with oil and bake at 200 degrees for 30 minutes.
3. For the filling, fry the chopped chicken, onion and garlic in a frying pan. Add spices.
4. Pour in a can of tomatoes and chopped basil.
5. Cook until the meat and onions are tender.
6. If the filling is too liquid, add flour.
7. Add cream cheese and grated hard cheese one minute before turning off the heat.
8. Stuff the peppers and sprinkle with cheese.
9. Bake at 200 degrees for 10 minutes.
