Delicious Stolichny cupcake: how to make a fluffy dough
Winter is a time for atmospheric sweet pastries. Especially for the holidays. That's why this Stolichny cupcake is perfect. The texture is very tender, because it is based on a lot of butter, and juicy because of the raisins.
The idea of making the Stolichny cupcake was published on the Instagram page of food blogger Polina with the nickname polli_cooking.
Ingredients:
- 150 g butter (soft)
- 150 g of icing sugar
- 2 eggs
- 150 g of raisins
- 200 g of flour
- 1 tsp of baking powder
- 10 g of vanilla sugar
- icing sugar for sprinkling
Method of preparation:
1. Pour boiling water over the raisins, let them stand for a few minutes, and rinse them well. Put them on a paper towel and dry them well.
2. Sift the flour and add the baking powder, vanilla sugar and dry raisins. Mix well.
3. Add the powdered sugar to the butter and combine until smooth (it is better if the butter is soft, you can melt it a little in the microwave).
4. Add the dry ingredients and knead the dough into a homogeneous dough.
5. Transfer to a baking dish, if you have a metal dish, cover it with parchment.
6. Put it in the oven preheated to 170 degrees for 60-65 minutes. Check for doneness with a wooden stick (it should be clean and dry).
7. Remove the cake from the mold and let it cool slightly.
8. Sprinkle with powdered sugar.
9. Let it cool completely.
