Delicious ravioli with chicken and cream sauce
If you don't like dumplings and varenyky, ravioli are the best alternative. Besides, they are very easy to prepare: you just need to make a delicious filling and a good dough.
Viktor Titov, the brand chef of the chain and founder of the Association of Chefs of the South of Ukraine, shared an exclusive recipe for a delicious and satisfying dish - ravioli with chicken and cream sauce - which you can prepare very quickly and easily.
Ingredients:
Dough:
- flour - 3 kg
- eggs - 1.2 kg
Filling:
- minced chicken - 120 g
- spices - 2 g
- salt - 11 g
- egg - 20 g
- flour for dusting - 15 g
- 36% cream - 100 g
- mozzarella cheese - 20 g
- parmesan cheese - 10 g
- microgreens - 2 g
Method of preparation:
1. Mix flour with eggs. Put the dough in the refrigerator for an hour and then knead it again.
2. Salt and add spices to the ready-made minced meat.
If desired, you can add mushrooms, onions or spinach to the minced meat.
3. Roll out the dough and distribute the minced meat at the rate of 12 g per 1 piece.
4. Brush the edges of the dough with a beaten egg and cover with a second layer of the dough.
5. Form ravioli and cook them in salted water.
6. For the sauce, heat cream, add mozzarella and cook for 1 minute. You can also add gorgonzola cheese and lightly salt.
7. Put most of the sauce on a plate, put the cooked ravioli on top and pour the remaining sauce over it.
8. Then sprinkle with grated Parmesan and garnish with microgreens.
