Delicious ketchup from plums: chef shared the recipe
Ketchup is a delicious, spicy, and very flavorful sauce, which is usually made from tomatoes. But, as it turns out, it can also be made from quite unusual, at first glance, vegetables and fruits.
Volodymyr Yaroslavskyi, culinary expert and MasterChef judge, shared on Instagram a recipe for a delicious and unusual ketchup made of plums, which will be even better than the classic one.
Ingredients:
- peeled plums – 700 g
- tomatoes – 200 g
- garlic – 3 cloves
- sugar – 70 g
- cider vinegar (wine or apple) – 3 tbsp
- salt – to taste
- water - 50 ml
- rosemary and thyme – a pinch
- cinnamon – 1 stick
- cloves – 15 pcs
- chopped ginger – to taste
- black and allspice – to taste
- paprika – to taste
Method of preparation:
- Clean the plums from the pips and put them in a saucepan.
- Add chopped tomatoes, garlic, sugar, vinegar, salt, water, rosemary and thyme. Put a cinnamon stick in there, too.
- Put everything on the stove over medium heat, bring to a boil, and simmer on a lower heat for about 45 minutes, stirring occasionally.
- When everything has boiled down, evaporated, and reduced almost by half – take out the cinnamon, beat together with the herbs in a blender until smooth, and rub through a sieve.
- Be sure to taste and based on their taste you can add what is missing.
- Once again, warm the mixture well over moderate heat for about 5-10 minutes and strain through a sieve again.
- Cool the ketchup and serve.
