Seasonal juicy eggplants can be used to make a delicious salad for the winter. It contains a lot of bell peppers and garlic. The appetizer turns out to be quite spicy and is perfectly stored.

The idea of preparing an eggplant salad for the winter was published on the Instagram page of a food blogger with the nickname mama na kykhne. For the following recipe, you will need vinegar.

Ingredients:

  • eggplant - 2.5 kg.
  • sweet pepper - 2-3 pcs.
  • water - 4 liters
  • garlic - 2 heads
  • salt - 125 g
  • vinegar - 125 ml
  • vegetable oil - 0.5 tbsp

Method of preparation:

1. Cut the eggplant into large 1- or 2-centimeter cubes.

2. Pour 4 liters of water into a saucepan.

3. Add the eggplant and salt.

4. Boil, cook for 5-10 minutes, and then drain.

5. Finely dice the pepper.

6. Grate the garlic.

7. Pour the oil into the pan and add all the vegetables.

8. Bring to a boil and cook for 10 minutes.

9. Add vinegar.

10. When it boils, pour into steamed jars.

11. Wrap for a day. You will get six 0.5-liter jars.
