Delicious borscht with cherries: when to add this special ingredient

Cherries can be used to make not only jam, dumplings or compotes but also borscht. With this ingredient, the popular dish becomes very spicy and has a light and natural sourness. You will be pleasantly surprised by the new taste. It is a great alternative to vinegar, which is added to give the dish a rich red color.

The idea of cooking borscht with cherries was published on the Instagram page of Svitlana Levytska (lanas_diet).

Ingredients:

  • beef ribs - 0.5 kg
  • young beets - 5 small ones
  • onion - 1 pc.
  • carrot - 1 pc.
  • potatoes - 5 pcs.
  • tomatoes - 5 pcs.
  • bell pepper - 1 pc.
  • cabbage - 0.5 pcs.
  • drilled cherries - 300 g
  • boiled beans - 50 g (if you like, you can use more)
  • salt, pepper
  • vegetable oil - 2 tbsp.

Method of preparation:

1. Cover the ribs with cold water and cook the broth for about an hour and a half.

2. Chop the vegetables randomly.

3. Add the raw onion.

4. Then carrots.

5. Leave to brew.

6. Pour oil into the pan, add beets, and leave to simmer under the lid until softened.

7. Stir occasionally to prevent the vegetable from burning.

8. Add the bell pepper and tomatoes.

9. Stew a little more and add pitted cherries.

10. While the cherries are stewing, add potatoes, cabbage, and beans to the broth. Add salt when it's boiling a little. To make the cabbage crispy, add it at the end.

11. Add peppercorns, allspice, the beet-cherry roast, and leave to simmer for 5-10 minutes.

12. Serve with sour cream and herbs.
