Ingredients
- Onion – 1 pc
- Sugar – 1 tbsp
- Garlic – 2 cloves
- Tomatoes in their juice
- Ginger – 4 cm
- Water – 650-700 ml
- Coconut milk – 360 ml
- Red pepper flakes – ½ tsp
- Red lentils – 140 g
- Cilantro
- Salt
- Pepper
Method of preparation
1. Finely chop the onion and garlic. Grate the ginger on a fine grater.
2. Heat the oil in a saucepan and fry the onion over medium heat until golden brown. Add ginger, garlic, and chili flakes and fry for 1-2 minutes.
3. Add lentils and fry for 1-2 minutes.
4. Add the tomatoes, warm water, 300 ml of coconut milk, salt and pepper.
5. Bring the soup to a boil, reduce heat, and simmer for 25 minutes.
6. Before serving, add the rest of the coconut milk, cilantro, and pepper to the soup.
