Delicious and healthy fried potato pancakes for children: minimum flour and oil
Potatoes and zucchini are the perfect base for making delicious and healthy pancakes that even children will love. They contain a minimum amount of flour and oil and are soft and very satisfying.
Food blogger Roksolana Harasymiv with the nickname roksolana.harasymiv shared a recipe for potato and zucchini pancakes for children on her Instagram page.
Ingredients:
- potatoes - 4 pcs.
- zucchini - 1 pc
- eggs - 2 pcs
- yogurt/sour cream - 1 tbsp.
- Ghee/butter - 1 tsp.
- onion - 1/2 pcs (if you have regular butter)
- spices (in this recipe - hops suneli, black pepper and salt)
- whole wheat flour - 1.5 tbsp.
Method of preparation:
1. Peel and finely grate the potatoes and onions on a grater or using a special food processor.
2. Finely grate the zucchini and squeeze it out of excess juice.
3. Mix the potatoes, onions, zucchini, egg, yogurt, spices, oil, and flour.
4. Fry the pancakes in a pan.
