Medivnik is a cake that everyone has loved since childhood. Every housewife has her own recipe for making this dessert, which makes it the most delicious.

Food blogger Vladimir Yaroslavsky has the same recipe. He shared his recipe on Instagram and said that the honey cake is extremely tender and fragile.

Ingredients for the cakes (for 12 pieces, or 2 cakes):

  • Sugar - 350 g
  • Honey - 320 g
  • Eggs - 4 pcs
  • Butter 82.5% - 150 g
  • Flour - 940 gr
  • Soda - 20 g

Ingredients for the cream (for 6 cakes):

  • Cream 35% - 450 ml
  • Sugar - 150 g
  • Sour cream 20-25% - 600 g
  • Lemon juice - 10 g

Method of preparation:

1. In a large bowl, mix sugar, buckwheat (preferably) honey, butter, baking soda, and eggs.

2. Put it in a steam bath and turn on the heat. Stirring constantly with a whisk, bring the mixture to about 55-60 degrees to make it hot. Be careful, the mixture will start to foam.

3. Add flour and knead the dough with a wooden spatula. Remove from heat, cover with foil, and let it cool slightly.

4. Divide the warm dough into 12 equal parts.

5. Take sheets of parchment and a lot of flour and form the dough into a rectangle, constantly dusting with flour. Turn the dough over. The finished rectangle should be the size of an A4 sheet and quite thin.

6. Pierce with a fork and bake on a sheet of parchment at 160 degrees until a homogeneous ruddy color. The finished cakes can be stored for a month.

7. Prepare the cream. Add lemon juice and sugar to the sour cream. Stir until the sugar dissolves.

8. Whip the cream until stiff peaks form and add the sour cream mixture in 2-3 stages.

9. Divide the finished cream into 5 equal parts and spread it on each of the 6 cakes. Do not grease the top cake with cream.

10. Cover with foil and refrigerate for 5-8 hours.
