Zucchini can be the basis not only for savory dishes but also for desserts. The season of this vegetable will soon begin, so it is worth making full use of its potential.

For example, food expert Svitlana Levitskaya shared a recipe for a tender, flavorful, and moist zucchini muffin on her Instagram page. "If you are afraid of zucchini, do not be, it is very tasty," she urged.

Ingredients:

  • 3 small zucchini (about 600 g)
  • 2 eggs
  • 100 ml of milk
  • 285 g of flour (can be whole wheat)
  • 100 g of melted butter
  • 200 g of honey
  • 1-1.5 tsp of cinnamon
  • a pinch of nutmeg
  • vanilla
  • lemon or orange zest can be added
  • 1 tsp. baking powder
  • 100 g of chocolate drops or 100 g of lightly roasted nuts

Method of preparation:

1. Grate the zucchini, put it in a sieve to remove excess moisture, and leave it for 20 minutes. For a muffin, you need about 400 grams of grated zucchini.

2. Add all other ingredients except chocolate or nuts.

3. Mix everything thoroughly.

4. Add chocolate drops or nuts. Leave a little for sprinkling on top.

5. Pour into the mold and bake at 180 degrees for 1 hour.

The muffin should be served cold. It can also be frozen in portions.
