Dairy-free custard that doesn't fall: for tubes, eclairs and cakes
Sour cream custard is very versatile and is suitable for eclairs, tubes, cakes, including Napoleon and honey cake, as well as cupcakes. It is made without milk and has a bright creamy flavor and aroma.
Food blogger Diana Goncharuk (home_lehko_i_smachno) shared a recipe for sour cream custard on her Instagram page that is stable and does not fall.
Ingredients:
- sour cream 10-20% - 450 g
- eggs - 3 pcs
- sugar - 200 g
- vanilla sugar - 20 g
- starch - 1 tbsp
- flour - 3 tbsp
- butter - 250 g
Method of preparation:
1. First, pour sour cream into a deep bowl, add eggs, sugar, and vanilla sugar. Mix with a whisk until smooth and sugar is completely dissolved.
2. Add the starch and flour to the mixture. Mix with a whisk to avoid lumps.
3. Then put the mass on the fire and cook over low heat, stirring constantly. When the mass boils, cook for another 1 minute. If there are lumps, it is better to mix them with a mixer.
4. Then remove the mass from the heat and transfer to another plate. Cover with cling film and leave to cool completely.
5. When the cream has cooled, prepare the butter. Beat it with a mixer for 2 minutes.
6. Add the whipped butter in portions to the cooled cream, whisking with a mixer. The cream is thick, fluffy, and light. It's ready!
