In summer, you should actively add a variety of seasonal berries and fruits to your baked goods. Apricots, for example, are perfect for a pie. Their taste is moderately sweet, with a slight tartness. It is especially delicious in combination with cottage cheese. The whole family will appreciate this dessert.

Ingredients for the dough:

  • flour – 250 g
  • butter – 100 g
  • sugar – 120 g
  • baking powder – 1 tsp
  • salt – a pinch
  • vanilla – on the tip of a knife
  • eggs – 1 pc

Ingredients for the filling:

  • apricots – 400-500 g
  • cottage cheese – 400 g
  • sugar – 80 g
  • eggs – 2 pcs
  • vanilla or vanilla sugar – to taste
  • sour cream – 100 g

Method of preparation:

1. For the base, add sugar, baking powder, salt, and vanilla to the flour and mix well.

2. Next, add the cold chopped butter and mix quickly into crumbs. Make a well in the center, add the egg, and knead the dough. Put it in the refrigerator.

3. Meanwhile, mix the cottage cheese, sugar, eggs, vanilla, and sour cream for the filling.

4. Blend all this with a blender.

5. Cut the apricots into cubes.

6. Cover the baking dish with parchment and put the dough with small sides.

7. Tamp it down with a glass or spoon.

8. Next, put the apricots and pour the cheese mixture over them.

9. Bake for 45 minutes at 180 degrees.

10. Leave the finished cake to cool completely – only then can you cut and serve it in portions.
