Cucumbers with spicy ketchup: 3 ways to prepare
If you like spicy pickles, it's time to start making them. There are plenty of seasonal vegetables now that will make a great base for winter preservation.
The FoodOboz editorial team shares 3 recipes for delicious, spicy cucumbers with ketchup that will be a great winter treat.
1. Pickled cucumbers with chili ketchup
Ingredients:
- cucumbers - 1 kg
- vinegar - 1 tbsp
- water - 1 liter
- chili ketchup - 150 g
- garlic - 100 g
- salt - 2 tbsp
- sugar - 2 tbsp
- bay leaf - 2-3 pcs.
- allspice - to taste
Method of preparation:
- Soak the cucumbers in cold water for 2-3 hours, so they will be elastic.
- Sterilize the jars in any convenient way.
- Peel the garlic, cut it in half, throw it to the bottom of the jar along with the pepper and bay leaf, and put the cucumbers in tightly.
- Boil water, pour over the cucumbers, and leave for 5-10 minutes.
- Marinade: drain the water from the jars, add salt, sugar, and ketchup, mix, and bring to a boil. Add vinegar at the very end.
- Pour the hot marinade over the cucumbers and preserve immediately, turn the jars upside down and cover with a warm towel or blanket.
- When the jars are completely cool, transfer them to a dark, cool place.
2. Cucumbers in tomato juice
Ingredients:
- Cucumbers - 300 g
- Tomato juice - 170 ml
- Sugar - 1 tbsp.
- Vinegar - 1 tbsp.
- Salt - 1 tbsp.
- Garlic - 5 cloves.
- Ground hot pepper - 1/4 tsp.
- Allspice - 3 pcs.
- Bay leaf - 1-2 pcs.
- Garlic - 5 cloves.
Method of preparation:
- Wash the cucumbers well, and cut off the tips on both sides.
- Put allspice, hot ground pepper, garlic, bay leaf, and cucumbers on the bottom of a sterile jar and pour boiling water over everything, leave for 10-15 minutes.
- Marinade: pour the water into a saucepan, add sugar, salt, tomato juice, bring to a boil and add vinegar.
- Pour the hot marinade over the cucumbers and preserve immediately.
- Be sure to turn the jars upside down, cover with a warm towel, and leave to cool completely.
3. Cucumbers with tomatoes and chili ketchup
Ingredients:
- Water - 3 liters
- Cucumbers - 2 kg
- Tomatoes - 2 kg
- Salt - 4 tbsp
- Chili ketchup - 300 ml
- Sugar - 2 cups
- Vinegar 9% - 300 ml
- Black pepper - 18 peas
- Allspice - 6 peas
- Cloves - 6 pcs.
- Garlic - 10 cloves.
Method of preparation:
- Wash the cucumbers and tomatoes, and pat dry. Cut off the ends of the cucumbers.
- Put garlic, allspice, cloves, black pepper, cucumbers, and tomatoes in sterile jars.
- Pour boiling water over them and leave for 10 minutes.
- Marinade: Pour water into a saucepan, add sugar, salt, and ketchup, bring to a boil, add vinegar, and pour the hot marinade over the jars.
- Immediately preserve and turn upside down.
- Let cool completely and transfer to a dark, cool place.
