Lightly salted cucumbers are one of the favorite snacks on the daily and festive table. They can be prepared simply with your favorite spices and herbs, as well as supplemented with garlic and horseradish, which will give the snack a spicy taste.
Food blogger Inna Kalancha (inna_kalancha) shared a recipe for lightly salted cucumbers in a jar on her Instagram page and told us the successful proportions for a 3-liter container.
Ingredients:
- cucumbers
- rock salt - 3 tbsp.
- garlic - 4-5 cloves
- horseradish root - 4-5 pieces
- dill inflorescences - 2-3 pcs.
- grape leaves, horseradish leaves - 2-3 pcs.
- hot capsicum - 1 pc.
Method of preparation:
1. Pre-pour cold water over the cucumbers and let stand for several hours.
2. Cut the garlic in half and chop the pepper.
3. Put horseradish leaves, dill, 3-5 pieces of garlic, horseradish root, and a few pieces of hot pepper on the bottom of the jar.
4. Fill the jar with cucumbers up to half.
5. Put a few pieces of garlic, horseradish root, and hot pepper on top and fill the jar with cucumbers to the top.
6. Put the rest of the garlic, horseradish, and hot pepper on top. Cover with horseradish leaves, dill, and a grape leaf.
7. Dissolve the salt in cold water in a 1-liter bowl. Stir until the salt dissolves.
8. Pour the brine over the cucumbers. Leave to pickle for 2 days. When ready, put them in the refrigerator and store them there.
