Crispy pickled cabbage with beets that is ready already the next day
Pickled cabbage is loved by many because despite its composition and ease of preparation, the dish is simply incredible and can easily outshine all other appetizers on the table. Ideally, pickled cabbage is quite crispy and has a pleasant sweet flavor. It all depends on a properly prepared marinade.
The recipe for crispy pickled cabbage with beets was shared by food blogger Iryna (irina_igorek) on her Instagram page.
Ingredients:
- cabbage - 1 kg
- beets - 1 pc
- carrots - 1 pc
- garlic - 0.5 heads
- marinade - 1 liter
Marinade (for 1 liter of water):
- salt - 1.5-2 tbsp.
- sugar - 6-7 tbsp.
- 9% vinegar - 80-100 ml
- vegetable oil - 50-70 ml
- bay leaves - 1-2 pcs
- allspice - 3 pcs
- peppercorns - 5-10 pcs
- cloves - 3 pcs
Method of preparation:
1. Cut the cabbage into cubes.
2. Grate the beets and carrots. Chop the garlic.
3. For the marinade, mix all the necessary ingredients in boiling water.
4. Tamp the cabbage together with the vegetables in layers.
5. Pour the marinade over. Leave to cool. Put in the refrigerator for 1 day.
