Crispy eggplant salad with a delicious dressing: a recipe for dinner

Eggplants can be used to make delicious salads, caviar, sauces, and appetizers. They can also be tasty canned, stewed with vegetables, and simply baked with cheese, vegetables, spices, and herbs.

The cook shared on Instagram a recipe for a delicious salad of crispy fried eggplant with tomatoes and dressing.

Ingredients:

  • 2 small eggplants
  • 2 medium tomatoes
  • 2 cucumbers
  • parsley
  • 2 tbsp of starch, salt, oil

Sauce:

  • 2 tbsp of vegetable oil
  • 1 clove of garlic
  • 1 tbsp of barbecue ketchup
  • 1 tbsp of teriyaki
  • 1 tsp of honey
  • 1 tsp of French mustard

Method of preparation:

1. Peel and cut the eggplant into cubes. Roll in starch and salt and deep-fry.

2. Chop the herbs and tomatoes.

3. Mix everything for the dressing.

4. Put the vegetables in a bowl and pour over the dressing.
