Crema catalana, or Catalan-style crème brûlée: how to prepare this traditional Barcelona dessert
Crema catalana, or Catalan-style crème brûlée, is a traditional Spanish dessert that anyone can make. It has an unusually delicate taste that can bring real gastronomic pleasure, making you want to eat it again and again.
Food blogger Olha Ryabenko shared how to make crema catalana so that it would be as good as in Barcelona itself on Instagram. It turns out that it's not difficult at all.
Ingredients
- milk - 500 ml
- sugar - 80 gr
- lemon zest - ½ pc
- orange zest - ½ pc
- cinnamon - 1 stick
- vanilla sugar - 1 tsp
- egg yolk - 2 pcs
- corn starch - 45 g
- brown sugar
Method of preparation
1. Pour milk into a saucepan, add lemon and orange zest, cinnamon stick, vanilla sugar and half the sugar. Bring to a boil and leave to cool.
2. Mix the egg yolks with the sugar in a bowl. Pour in the cooled milk through a sieve, add tarch and put on low heat.
3. Stir constantly with a whisk until the first bubble appears and set aside.
4. Return to the fire and stir until thickened. The cream is ready.
5. Pour into molds and refrigerate for 4-6 hours, preferably overnight.
6. Sprinkle with brown sugar and heat with a kitchen burner. If there is no burner, then preheat the oven in the top mode or grill to maximum and put it on the very top for 3 minutes until the sugar becomes caramel-colored.
