Back in the Middle Ages, in the Cornish region, miners' wives always tried to cook varied and nutritious food for their husbands. This necessarily included desserts. The most favorite was apple pie, which was very popular with miners. It became a tradition for them to take a piece of pie to work and have it with tea during breaks.

This is probably one of the reasons why the people of Cornwall are still famous for the variety and simplicity of their pastries. In addition, the Cornish pie recipe has long been used by housewives around the world. Its main advantage over other pies is that it is as economical as possible, quick to prepare, and can be kept fresh for several days without getting stale.

Cornish apple pie

Ingredients:

  • Butter - 200 g
  • Sugar - 150 g
  • Vanilla sugar - 10 g
  • Eggs - 3 pcs
  • Sour cream - 100 g
  • Wheat flour - 250 g
  • Baking powder - 1.5 tsp
  • Salt.

For the filling:

  • Apples - 3-4 pcs.
  • Sugar
  • Cinnamon.

Method of preparation:

  1. Melt the butter and add sugar and vanilla sugar to it. Mix well.
  2. Separate the whites from the yolks. Add the yolks to the butter. Then add sour cream to the mixture. Stir to combine.
  3. Add the flour and baking powder. Knead a thick dough.
  4. Add a pinch of salt to the whites and beat into a thick foam. Gradually add them to the dough.
  5. Put the dough into a mold.
  6. Core the apples and cut them into thin slices. Put the apples firmly into the dough.
  7. Sprinkle sugar and cinnamon on top. Put it in the oven. Bake at 180 degrees for 50 minutes.
