Cold summer kholodnyk soup instead of hot red borscht: how to prepare this seasonal dish

Kholodnyk is a summer dish with beets, seasonal herbs, and other young vegetables. It is made with cold kefir, so this soup is very refreshing and ideal for the summer heat.

The idea of making a homemade summer cold soup was published on the Instagram page of food blogger Larysa with the nickname glutenfree lo. The dish looks like a classic red borscht.

Ingredients:

  • beets - 3 pieces (medium)
  • cucumber - 4 small
  • eggs - 4 pcs.
  • green onions
  • dill
  • cold kefir - 850 ml.

Method of preparation:

1. Boil the beets.

2. Grate them.

3. Add finely chopped cucumbers, eggs, and herbs.

4. Season with salt, pepper and dried onion to taste.

5. Pour kefir over everything.

6. You can adjust the density by adding mineral water.

7. It is delicious served with fried hot potatoes.
