Cold borscht that even children can eat: how to prepare the first dish
Cold vegetable borscht with meat is a great alternative to okroshka in the summer heat. Fresh vegetables are usually used to prepare the first dish, and everything is garnished with a cold beetroot dressing. But to make cold borscht suitable even for children, the vegetables should be boiled or baked beforehand, and sour cream should be used instead of the traditional dressing.

Ingredients:
- boiled beets - 1 pc
- boiled carrots - 1\2 pcs
- boiled potatoes - 1 pc
- boiled eggs - 2 pcs
- cucumbers - 2 pcs
- sour cream - 2 tbsp
- cold boiled water - 500-600 ml
- boiled meat
- lemon
- dill
- salt
Method of preparation:
1. Grate all vegetables on a coarse grater.
2. Chop the eggs, dill and meat.
3. Combine all the ingredients. Add sour cream and mix well.
4. Pour cold boiled water over. Add salt and lemon juice to taste.
5. Leave the soup in the refrigerator for 1 hour.
