Classic Napoleon Cake Recipe

Ingredients for tortillas:

  • flour - 350 g
  • sugar - 50 g
  • salt - a pinch
  • butter - 180 g
  • milk - 65 g
  • fat sour cream - 50 g
  • eggs - 1 pc

Preparation method:

1. Mix flour, sugar and salt with a whisk.

2. Add cold butter, cut into small pieces, knead with flour until crumbs form.

3. Add milk, vegetable oil, sour cream, knead dough.

4. Immediately divide into portions, put on a plate, cover with foil.

5. Put in the refrigerator for an hour.

6. Roll out a thin dough, sprinkle the surface with flour.

7. Cut out each cake in turn, 19 cm in diameter, prick with a fork.

8. Bake at 180 degrees for 7-8 minutes until lightly golden.

Ingredients for the cream:

  • sugar - 100 g
  • eggs - 2 pcs
  • cornstarch - 35 g
  • milk - 300 ml
  • butter - 30 g
  • heavy cream - 33-36%

Method of preparation:

1. Mix and beat with a whisk, sugar, starch, eggs

2. Heat milk to steam, thin stream, stirring with a whisk, pour the mixture with eggs, stir.

3. Place on the stove, cook until thickened.

4. Add butter, cool.

Cream for drenching shortcakes

5. Whip cold cream, combine with custard base, make the mass homogeneous.

6. Make layers of tortillas, spreading cream over each one. Spread out about 1.5 full tbsp of cream, smear the sides well.

7. Place in the refrigerator overnight, wrapped in cling film.

8. Take the cake out of the refrigerator, sprinkle on all sides with crumbs and decorate with berries.
