Chicken and mushroom quiche: how to cook to make it juicy

Quiche is a French pie with a sandy base and a filling of cheese, cream, and eggs. However, there are many different variants of fillings for this open pie. Sweet quiche, which is made with apples, various berries, and sweet cottage cheese, has gained popularity recently.

But food blogger Alex Mil offered a recipe for quiche with chicken and mushrooms. On Instagram, he said that the dish is juicy, tasty, and nutritious.

Ingredients for the dough

  • eggs - 1 pc
  • flour - 250 gr
  • butter - 120 gr
  • milk - 50 ml
  • salt - a pinch

Ingredients for the filling

  • mozzarella - 180 gr
  • chicken fillet - 400 gr
  • large onion - 1 pc
  • mushrooms - 300 g
  • cream 33% - 300 ml
  • oil for frying - 15 ml
  • salt
  • pepper
  • nutmeg
  • cherry tomatoes - 4-6 pcs

Method of preparation

1. Pour flour and cold butter into a bowl and knead into crumbs with your hands. Add egg, milk, salt and knead a homogeneous dough. Cover with plastic wrap and refrigerate for 30 minutes.

2. Prepare the filling. Fry chopped onion in vegetable oil until transparent. Add chicken and fry for 7-8 minutes, stirring occasionally.

3. Add mushrooms, salt and pepper. Fry, regularly stirring until the liquid has completely evaporated (10-12 minutes).

4. Roll out the dough and put it into a mold. Cut off the excess sides. Pierce the bottom with a fork, put parchment on it, pour some weight on it so that the dough does not swell (for example, dry rice) and bake at 180C for 20 minutes.

5. Break eggs into a bowl, pour in heavy cream, and add salt and nutmeg. Whisk everything.

6. Take the mold out of the oven and remove the parchment. Put the filling of meat and mushrooms, pour cream, and sprinkle with grated cheese. Add cherry tomato halves on top.

7. Put it in a preheated oven at 180C for 45-50 minutes.
