Cherry plum tkemali for the winter: a successful recipe for spicy sauce

Tkemali is a traditional Georgian plum sauce. It tastes especially good when made with cherry plums. However, don't forget to add hot pepper, garlic, cilantro, and suneli hops seasoning to make the sauce perfect.

Food blogger Myroslava Krutiy shared a recipe for cherry plum tkemali sauce on her Instagram page.

Ingredients:

  • cherry plum - 1 kg
  • sugar - 4 tbsp
  • water - 150 ml
  • salt - 1.5 tsp.
  • suneli hops - 1.5 tsp.
  • garlic - 6 cloves
  • hot pepper - 1 pc
  • cilantro - 1 bunch

Method of preparation:

1. Boil the plums for 20 minutes. Remove pits and beat the fruit with a blender.

2. Boil the resulting plum mass for 20 minutes.

3. Add salt, sugar, seasoning, garlic and pepper. Cook for another 5 minutes.

4. Add chopped cilantro.

5. Beat the mass with a blender and then bring to a boil again.

6. Pour into sterile jars. Close with lids.
