Summer is the best time for delicious berry pies. Now, more than ever, all berries, fruits, and vegetables are the healthiest, of course, it is best to eat them fresh, so you get the most vitamins, but you can also make flavorful jam, pies, and dumplings.

MasterChef judge and pastry chef LiZa Hlinska shared a delicious and, most importantly, very simple recipe for chocolate cherry pie on her YouTube channel, which will turn out to be very successful (to watch the video, scroll to the end).

Ingredients:

Chocolate sponge cake:

  • flour - 110 g
  • egg yolks - 100 g (5-6 pcs.)
  • sugar to the yolk - 50 g
  • sugar to the protein - 100 g
  • cocoa powder - 30 g
  • dark chocolate - 70 g

For the filling:

  • cherries - 300 g
  • sugar - 50 g
  • corn starch - 20 g
  • water - 50 ml
  • thin bean - 1 pc - optional

Method of preparation:

  1. Filling: put the cherries in a saucepan, grate the tonka bean on a fine grater, and add to the same.
  2. Add water.
  3. Combine the sugar and cornstarch, mix thoroughly, and put the saucepan on the fire, cook constantly stirring until the mixture thickens.
  4. Transfer the filling to a bowl and leave to cool.
  5. For the chocolate sponge cake: add the egg yolks and sugar to the bowl of a food processor, and beat well for about 7-8 minutes until the mixture turns white and the sugar is completely dissolved. Transfer the mixture to a clean bowl.
  6. Beat the whites with the sugar until stiff peaks form. Add the beaten yolks to them, and mix thoroughly and very gently so that the whites do not fall off.
  7. In a separate bowl, combine the flour, and cocoa and sift through a sieve in small portions into the egg white-yolk mixture, mix very gently.
  8. At the very end, add the chocolate, mix, and put the dough into the mold. The first layer is dough, cherry filling, and dough on top.
  9. Put the pie in a preheated oven for 20-30 minutes at 170 C.

Sprinkle the finished cake with cocoa powder before serving.
