Cheesecakes are a delicious option for a quick breakfast and dessert. Ideally, they are tender and airy, and most importantly, they hold their shape perfectly. In this case, it is important not to add too many eggs and not to fill the cheesecakes with flour.

One of the culinary blogs (zhuravlina_cooking) published a recipe for tender and airy cheesecakes that have the perfect shape, just like in a restaurant on Instagram.

  • fine-grained cottage cheese – 350-360 g
  • yolk – 1 pc
  • sugar – 1 tbsp with a slide
  • vanilla sugar – 10 g
  • flour – 1 tbsp without a slide + flour for the formation of cheesecakes

Method of preparation:

1. Add the egg yolk, sugar, vanilla sugar, and flour to the cottage cheese. Knead a homogeneous curd dough with a spoon or your hands.

2. Sprinkle the work surface with flour. Take a tablespoon of the curd mass and form a ball with your hands. Then put it on the surface, sprinkle with flour, and use a knife to form a cheesecake, giving it a uniform shape.

3. Put the finished cheesecakes on a board covered with parchment (this is necessary to prevent them from sticking to the surface) and put them in the freezer. In this case, when fried, the cheesecakes will have a crispy crust, and the filling inside will be tender, like cream. However, you can fry them right away.

4. Serve the fried cheesecakes with sour cream, syrup, jam, or topping. Done!

A few tips:

  • The cottage cheese should not be too wet, if it is grainy, it is better to whip it with a blender.
  • If you have a large egg, it is better to use only the yolk.
  • Flour in cheesecakes can be replaced with semolina.
