Carrot pastries – delicious cookies worth making
We are used to carrots being traditionally used as a supplement: a fry for soup, an ingredient for minced meat or salad. But this product can be used to prepare many independent dishes. We need to seize the moment right now, because the carrot season is in full swing. Carrot cookies are especially delicious.
Today, FoodOboz editorial team shares a simple idea for making delicious and healthy carrot cookies, which was posted by food blogger arpi_foodblogger on her Instagram page.
Ingredients:
- flour - 200 g
- butter - 125 g
- carrots - 100 g
- sugar - 80 g
- oatmeal - 50 g
- raisins - 50 g
- nuts - 50 g
- egg - 1 pc
- sugar -1 tsp
- soda - 0.5 tsp
- ginger - 1/4 tsp
- nutmeg - 1/4 tsp
- salt - 1/4 tsp
Method of preparation:
- Heat the butter to room temperature.
- Rinse the raisins and pour boiling water over them.
- Dry the oatmeal in the oven and grind it.
- Combine oatmeal and regular flour, baking soda, ginger, nutmeg, cinnamon and salt. Mix with a whisk for 1 minute.
- Beat butter with regular and vanilla sugar until fluffy.
- Add the egg and mix well.
- Grate the carrots on a fine grater until mashed. Combine with the butter.
- Mix all the prepared masses. Add raisins and nuts, mix thoroughly.
- Put the dough in the refrigerator for one hour.
- Form cookies and bake for 20 minutes in a preheated 180-degree oven.
These cookies can be stored in the refrigerator for 5 days.
