A food blogger with the nickname zolanna03 shared how to make carrot muffins on Instagram. According to her, you can make many portioned muffins using this recipe, or make one large one and cut it into pieces. In any case, it will be delicious.
Ingredients
- Eggs - 3 pcs
- Honey - 100 gr
- Milk - 180 ml
- Oil - 5 tbsp
- Baking powder - 10 g
- Rice flour - 150 g
- Carrots - 150 ml
- Walnuts - 100 gr
- Cinnamon - 1 tsp
- Nutmeg - 1 tsp.
Ingredients for the cream
- Mascarpone - 100 gr
- Orange zest - 1 pc
- Honey - 1 tbsp
Method of preparation
1. Beat eggs with honey until fluffy.
2. Add oil and milk, mix well.
3. Add flour and baking powder, mix well.
4. Grate the carrots.
5. Add carrots, nuts, cut into medium pieces and spices.
6. Stir and bake in the mold at 170 degrees for 45-50 minutes.
7. Prepare the cream. Mix the mascarpone with honey and grate the zest.
8. Spread the cooled cupcake with cream and serve.
