Caramelized apricot biscuit: how to make an unusual dessert with seasonal fruit
Seasonal fruits and berries are exactly what you need to fill your body with useful microelements and vitamins, as well as to satisfy your own gastronomic needs. They also make incredibly delicious pastries, the aroma of which can penetrate every corner of the house.
A food blogger with the nickname lesya kovalchuk bakery showed on Instagram what kind of pastries she makes with apricots, which are in full season now. She explained how to make a delicious and unusual biscuit with apricots and almond cream.
Ingredients for the dough for 2 pieces
- Flour - 150 gr
- Butter 82% cold - 100 gr
- Sour cream from 20% cold - 70 gr
- Sugar - 2 tbsp
- Salt - a pinch
- Yolk - 1 pc + 1 tbsp of milk
Ingredients for almond cream
- Butter - 60 gr
- Sugar - 60 gr
- Almond flour - 60 g
- Egg - 1 pc
Ingredients for caramelized apricots
- Small apricots - 12-16 pcs
- Butter - 15 g
- Sugar - 2 tbsp
Additional ingredients
- Almond flakes - 40 g
How to make the cream
1.Beat softened butter with sugar until fluffy.
2. Add the almond flour and beat.
3. Add the egg and beat. Put it in the fridge for 30 minutes.
How to make the dough
1. Mix the flour, salt and sugar with a whisk.
2. Grate the chilled butter on a coarse grater and add to the dry ingredients.
3. Rub with your hands until you get a homogeneous crumb. Work quickly so that the butter does not have time to melt.
4. Add the chilled sour cream to the crumbs and mix everything with your hands until smooth.
5. Wrap the dough in cling film or a bag and put it in the fridge for at least 30 minutes.
How to cook apricots
1. Melt the butter in a frying pan.
2. Cut the apricots in half and remove the pits.
3. Dip each half into the sugar with the cut side down and put it in the pan for 5-7 minutes until the sugar caramelizes.
4. Transfer from the pan to a plate and let cool slightly.
Forming the biscuits
1.Take the chilled dough out of the fridge, divide it into 2 parts and roll it out in a circle on a sheet of floured parchment one by one.
2. Spread the dough with half of the almond cream 2 cm from the edge.
3. Place half of the caramelized apricots on top at a distance from each other, sprinkle with almond flakes.
4. Carefully tuck the edge of the dough and brush it with egg yolk and milk.
5. Put the biscuits in the oven preheated to 180C for 25 minutes.
