Budget pea soup with dumplings for a large family
If you find yourself in an environment where many people live in the same place and your budget is limited, this soup will be a great lunch option. Nuts, peas and meat in one dish will immediately satiate the body, and the liquid consistency will not weigh down the stomach. You can cook more at once and feed a large family.
Famous Ukrainian chef Liza Hlinska (lizaglinskaya) shared the idea of making delicious pea soup with dumplings on her Instagram page.
Ingredients:
- water
- split peas - 500 g
- large carrots - 1 pc
- medium onion - 2 pcs
- smoked ribs - 400-500 g or 1 smoked chicken thigh
- potatoes - 3-4 pcs
- salt - to taste
- fresh dill
Ingredients for dumplings:
- chicken eggs - 1 pc
- sour cream - 50 g
- flour - 60 g
- salt
Method of preparation:
1. Rinse the peas in the evening, soak in cold water, and continue cooking in the morning.
2. If you are short on time, you can use the second option: add 1 teaspoon of baking soda to the peas and pour boiling water over them. Leave for 15-20 minutes and then rinse.
3. Cover with cold water, add whole carrots, and salt to taste.
4. After boiling, cook over low heat.
5. Remove the foam.
6. Add the chopped ribs. If it is a thigh, disassemble it and cut into small pieces.
7. Chop the onion.
8. Cook for 30-40 minutes.
9. Add the potato cubes and cook until tender.
10. Remove the carrots, cool them slightly, grate finely and add to the soup.
11. Make dumplings by mixing all the ingredients.
12. Gradually add the dumplings to the soup with a spoon.
13. Cook for another 2-3 minutes. All the dumplings will float to the surface.
14. Add finely chopped dill and salt, if necessary.
