Budget homemade elderberry champagne: how to make it right

Ingredients:
- water 10 liters
- elderberry inflorescences 20 (medium) pieces
- sugar 3 cups (250 ml)
- citric acid 20 g
Method of preparation:
1. Do not wash the elderberries, but clean them from pests, put them in a container and cover with water.
2. Add the sugar and citric acid, stir until dissolved, cover and put in a warm, dark place for 4-5 days.
3. After that, strain through a sieve and pour into bottles without filling up to about 4 fingers, release excess air and screw the bottles. Put them horizontally in a dark, cool place for 2-3 months.
