Breakfast in 10 minutes: potato pancakes with mint yogurt

Every day, in the "Breakfast in 10 minutes" section, FoodOboz editors share recipes for simple dishes that take no more than ten minutes to prepare.
Today we offer you to cook hashbrowns – potato pancakes, popular in North America and the UK. In fact, the dish is analogous to our pancakes, the only difference is that hash browns are usually eaten for breakfast.
For hash browns:
- potatoes - 3 pcs.
- egg - 1 pc.
- salt, pepper - to taste
- oil - for frying
For mint yogurt:
- natural yogurt - 1 cup
- fresh mint - a small bunch
- lemon - a slice
- Peel the potatoes, grate them on a coarse grater, and squeeze out the liquid.
- Add the egg, salt, and pepper, mix well, and immediately place in a hot and oiled frying pan.
- Fry over high heat until golden brown on both sides.
- Wash the mint, tear off the leaves, and chop them finely with a knife. Add to the yogurt, squeeze the juice from a slice of lemon, and mix. Serve with hash browns.
