Beetroot salads are the best dish for a light lunch or even dinner. It's worth noting that beets go well with onions, prunes, raisins, spices, garlic, sour cream, and vegetables.
Chef Anatolii Dobrovolskyi shared a recipe for a delicious and healthy beetroot salad with prunes and nuts on Instagram.
Ingredients:
- Boiled or baked beets - 500 g
- Sugar - 2 tbsp. l
- Apple cider vinegar - 1 tbsp.
- Walnuts - 80 g
- Prunes - 150 g
- Salt - to taste
- Sour cream - 200 g
- Greens - for serving
Method of preparation:
1. Bake the beets, peel and grate, add apple cider vinegar and mix.
2. Pour boiling water over the prunes, drain and chop them.
3. Fry the nuts in a dry frying pan and chop finely, add to the beets.
4. Add salt, sugar, sour cream, and mix.
Sprinkle the salad with chopped herbs before serving.
