Meatballs are a very satisfying and tasty dish that can be a great alternative to classic cutlets and stuffed cabbage. But in summer, this dish can be prepared in a slightly different way by simply adding vegetables, for example.
Cook Yevheniia Karpiuk shared a recipe for delicious meatballs with eggplant on Instagram, which will be very juicy and tasty.
Ingredients:
- minced meat (can be pork / veal / chicken) - 600 g
- onion - 1 pc.
- eggplant - 1 pc.
- bread - 2-3 pieces
- eggs - 1 pc.
- fresh or dried garlic
Sauce:
- fresh garlic - 2-3 cloves.
- canned tomatoes - 1/2 can
- Italian herbs - to taste
- salt - to taste
- greens - a bunch
- sour cream - 50-100 g
Method of preparation:
1. Wash the eggplants, prick them with a fork, drizzle with oil and bake in the oven until tender. Then cut them open and scoop out the middle with a spoon.
2. Put the minced meat, onion, garlic, spices, eggplant pulp, egg, bread, and blend until smooth.
3. Form meatballs with your hands.
4. Fry in vegetable oil.
5. Add the whole garlic cloves, tomatoes, salt, spices and sugar. Pour in a little water, cover and simmer over medium heat for 30 minutes.
