If you're tired of meat and fish salads, it's best to choose lighter and simpler salads with delicious sauces in the summer. To spice up your vegetables, add new ingredients, such as aromatic oils and herbs, as well as honey, soy sauce, citrus juice, and zest.
Food blogger Anastasia Solopiy shared a recipe on Instagram for a delicious, light summer salad with vegetables, cheese, nuts, and sweet dressing.
Ingredients:
- tomatoes - 3 pcs.
- red onion 1/2 pc.
- cucumbers - 2 pcs.
- feta cheese - 100 g
- any nuts - 30 g
- mint - 2 sprigs
- olive oil - 1 tbsp.
- honey - 1 hour
- salt - to taste
Method of preparation:
1. Wash and chop the vegetables.
2. Cut the onion into rings and marinate in a sauce of balsamic vinegar and honey.
3. Fry the nuts in a frying pan.
4. Mix the tomatoes and cucumbers with the onion, add the mint and mix well.
5. Cut the cheese into cubes, place on top and sprinkle with nuts. Drizzle with a little more olive oil and serve.
