Better than eclairs: fluffy Czech dukat buns with pudding cream
Czech buns are a delicious, flavorful bakery product that resembles yeast-dough buns in taste and preparation. But instead of a filling, these buns are made with vanilla pudding cream.
Cook Maria (mashka_salei) shared on Instagram a recipe for delicious Czech buns with cream and berries that you can easily make at home.
Ingredients:
- Milk - 300 ml
- Sugar - 50 g
- Fresh yeast - 40 g
- Salt - 1 tsp.
- Vanilla sugar - 1 tsp.
- Eggs - 2 pcs.
- Flour - 700 g
- Baking powder - 1 sachet
- Butter - 125 g + 50 g for greasing the buns
Ingredients for the cream:
- Low-fat cream or full-fat milk - 1.5 l
- Sugar - 150 g
- Vanilla pudding - 1 sachet
- Rum, cognac if desired - 1 tbsp.
Method of preparation:
1. Dough: add yeast and half of the sugar from the total mass to the warm milk, mix and add some of the flour, mix, cover with a towel, and leave for 10-15 minutes.
2. Add the remaining sugar, vanilla sugar, salt, and eggs to the finished dough, mix, then add the flour and baking powder, knead the dough a little, add the soft butter, and knead for another 10-15 minutes, leaving for another 1 hour.
3. Divide the dough into pieces, roll out into bundles, place on a baking sheet, cut into pieces and leave to proof for 20-40 minutes in a warm place. Then brush with melted butter.
4. Bake in a preheated oven for 25-30 minutes at 180 °C.
5. Cream: in a heavy-bottomed saucepan, combine the cream or milk with the sugar and pudding.
6. Remove the buns and pour the hot cream over them.
Sprinkle the buns with powdered sugar and berries before serving!
